I've had a few snails grow up to be almost regular snail size and then all of a sudden they disappear. Where do they go? Are there rogue snails hiding in between the cushions of my couch? Has my girlfriend been secretly snacking on them? Where are my snails?

my guess is that they found a better place.. up in snail heaven. or in snail hell... i dunno if snail orgies are considered sinful in snail land. lord knows mine are doomed if so.
It's been my experience that snails disappear at different stages in their growth. Maybe they go on a vision quest, maybe they shack up with other tween snails, maybe they're just hiding in the rocks. Who knows.
This is a clear cut case of snail cannabalism. More than likely your snail individuals are derived from the snail tribes of the Crossroads mall Petco. Long disregarded by both snail historians and the more civilized snail families, snails from Crossroads mall are known to eat their young.
